Sprinkle Sugar Celebration Cookies

What is one of my favorite sweet treats? COOKIES! From classic chocolate chip, to buttery shortbread, to cinnamon-y snickerdoodles, there is a cookie to please and delight anyone and everyone.

 

Cookies are super easy to make, bake, and transport.  My latest cookie creation is a simple sugar cookie with rainbow sprinkles. Why? Not only is it effortless, the sprinkles 'dress' up a simple cookie to a celebration cookie. (My yogi pals loved 'em!)

Sprinkle sugar cookie recipe:
oven: 375 degrees F
yield: 21 medium size cookies (I used a #40 portion scoop) You can use an ice-cream scoop or a large spoon to portion the cookies, too. 
tools needed: 5 qt standing kitchen mixer, measuring cups and spoons, mixing bowls, spatula , whisk, parchment paper, cookie sheets

 

Ingredients:

1 cup unsalted soften butter, cut into cubes

1 1/2 cups white sugar

2 egg

1 tsp vanilla

3 cups all purpose flour

1 tsp fine sea salt

1 tsp baking soda

1/2 tsp baking powder

Rainbow sprinkles, as needed

 

 

  • Cream 1 cup soften unsalted butter with 1 1/2 cups white sugar for approx. 8-10 minutes or until super fluffy and 'white' color, with the paddle attachment. 

 

  • Whisk together 1 egg and 1 tablespoon vanilla extract. Slowly, add to the creamed butter-sugar mixture while the mixer is on low speed. Scrape down the sides of the bowl with a spatula. 

 

  • Sift together 3 cups all purpose flour, 1 teaspoon salt, 1 teaspoon baking soda, and 1/2 teaspoon baking powder. Add to the butter-egg-sugar mixer. Mix on low speed until just combined. Do not over mix. Scrape down the sides of the bowl with a spatula to make sure the cookie batter is uniform. 

 

  • Using a scoop (or spoons), roll the cookie batter in a medium size ball and roll into a bowl of rainbow sprinkles. Slightly 'flatten' the ball into a small disk. Place on parchment lined cookie sheets. 

 

  • Bake for a total of 15 minutes, rotating the the cookies half way. The cookies will have a slight golden tone on the outside edge. Eat, share, and enjoy! 

 

 

 The cookies make for a tasty gift to anyone who has need some extra sweetness!
