Strawberry Trifle with SkinnyPop Popcorn Streusel

Greetings!

 



When I heard about SkinnyPop Popcorn I thought it'd be fun to make a spring-themed dessert using one of their many flavors. With sunshine around the corner, this new dessert will add some true sweetness to your spring seasoon!

 

First off, what is SkinnyPop Popcorn? It is the snack to have in your pantry, great for all ages and appetites. SkinnyPop Popcorn comes in a variety of flavors, packaged in large poppped popcorn bags, microwave popcorn, popcorn mini cakes, and variety packs. They start with premium popcorn kernels and sunflower oil in all of their products.
Don't worry folks, it is gluten-free, contains no GMOs, dairy free, peanut free, no trans fat, and no artificial flavors. Plus, it is certified kosher and vegan! It's truly a guilt-free snack I can munch on. 

 

 

What did I create? Strawberry trifle with SkinnyPop popcorn streusel. Pound cake is layered between a lightly sweetened mascarpone filling, with strawberries (or your favorite spring fruit), and SkinnyPop popcorn streusel. Yup, SkinnyPop meets classic oat streusel. Trust me on this! 

 

Strawberry trifle with SkinnyPop popcorn streusel
Oven: 350 degrees F
Tools: Mixing bowls, spatula, measuring cups, standing kitchen mixer, microplane (or zester), cookie sheet.

1) Prepare the SkinnyPop popcorn streusel:
In a large bowl, add:
1 1/4 cup flour
1/2 cup brown sugar
2 teaspoon salt
2 teaspoon orange zest
2/3 cup thick oats
3 cups SkinnyPop original popcorn
2 teaspoon ground cinnamon
6 tablespoon melted unsalted butter
-Mix together, pour onto parchment or foil lined cookie sheet, and bake for 30 minutes.
-Cool together at room temperature.

 

2) Prepare mascarpone filling:
In a medium bowl, add:
8 oz mascarpone cheese
1/8 cup white sugar
1 tablespoon orange juice
-Mix together until uniform, using a spatula.
-Whip 1 cup heavy cream until stiff peaks.
-Slowly, fold the whipped cream unto the mascarpone-sugar mixture.
-Chill in fridge for 15 minutes.

3) Prepare strawberries:
In a medium bowl, add:
Sliced 1-16oz package strawberries
1 tablespoon white sugar
1 tablespoon lemon juice.
Chill in fridge for 15 minutes.

 

4) To assemble, you need: 1- 6 inch round glass container
Slice 1-pound cake loaf (store bought or homemade; approx. 8 inch long).
First layer: Pound cake
Second layer: Mascarpone filling
Third layer: SkinnyPop popcorn streusel
Fourth layer: Strawberries
Repeat for two more layers.
The top layer: decorate the strawberries like a flower to celebrate spring and top with streusel.
