Browned Butter Banana Tart

Whenever I have family in town, I like to make an extra special dessert. With Seattle's recent heat wave, I wanted some light and airy, yet sweet and a bit sinful. Tarts are my jam. You can fill them with almost any cake or filling flavor. I had a bunch of extra bananas I needed to use, so I whipped up a brown butter tart for 'em. Plus the rest of the ingredients are basic pantry stuff I already had!


Kimm's Browned Butter Banana Tart

Pan size: 1 - 9 inch tart shell (with removeable bottom), greased with butter

Oven: 325 degrees F

Prep: Make tart  dough one day ahead.


Ingredients for tart shell:

1/2 cup unsalted butter

1/3 cup white sugar

1/2 teaspoon fine sea salt

2 yolks

1 teaspoon vanilla

1 1/4 cup all purpose flour


Ingredients for filling:

2 large bananas, sliced

6 yolks

3/4 cup white sugar

1 1/4 (3/4 cup) unsalted butter

1 teaspoon vanilla

1 teaspoon ground cinnamon

1 teaspoon fine sea salt


Garnish: Powder sugar 




Tart Shell recipe:

-In a kitchen mixer, with paddle attachment, cream together: 1/2 cup unsalted soften butter and 1/3 cup white sugar and 1/2 teaspoon salt until light and fluffy.

-Add: 2 egg yolks and 1 teaspoon vanilla

-Add: 1 1/4 cup all purpose flour. Mix until just combine, wrap in plastic wrap and chill over night. 

Par-bake your tart shell:

-Pre heat your oven. Roll out tart dough and press into greased tart pan. 

-Put a sheet of parchment paper over tart shell and line with pie weights (or my cheat weight: dried black beans)

-Bake for approx. 30 mins or until golden brown. 



Filling recipe:

-In kitchen aid mixer, with the whisk attachment, whip together: 6 yolks and 3/4 cup sugar until ribbon stage (about 5 minutes on medium speed).

-Melt: 1 1/2 sticks unsalted butter in a large skillet. Add 1 teaspoon vanilla, 1 teaspoon salt, and 1 teaspoon ground cinnamon. Cook until butter browns, about 8 mins. 

-SLOWLY, pour browned butter into the whipping egg yolks and sugar.

-Add 1/2 cup all purpose flour and mix gently.

-Slice 2 large bananas into slices and line bottom of parbaked tart shell. Pour cake filling over bananas.

-Bake for 35 minutes.

-Cool. Sprinkle with powder sugar.


Not only is this tart delicious by itself, it is equally delicious with vanilla bean gelato, whipped cream, and.or a glass of rose.
