Monday's Brownies

Mondays can be long, challenging, and well, difficult. Some indulge on the weekends, other on special occasions, and smart people (like you!) indulge on a Monday. 

These 3-bowl brownies are super easy to make, bake, and eat. I omitted nuts, but they can easily be added to it.

Monday's Brownies

Oven: 350 degrees F

Time: 20 minutes

Pan used: 9 inch x 9 inch non stick square, greased with butter, lined with parchment paper

 

Ingredients use:

1/2 cup melted butter

2 tablespoon veggie oil (or other flavorless oil)

1 1/4 cup white sugar

2 large eggs

1 teaspoon vanilla

1/2 cup all purpose flour

1/2 cup unsweetened cocoa powder

1/8 teaspoon salt

1 cup semi sweet chocolate chips

1/2 cup chopped nuts (optional)

 

Directions:

  • In a large bowl, combine and whisk together:

  • 1/2 cup melted butter

  • 2 tablespoon veggie oil

  • 1 1/4 cup white sugar

 

In a medium bowl, whisk together:

  • 2 eggs

  • 1 teaspoon vanilla 

  • 1/8 teaspoon salt

  • Add to butter-oil-sugar mix

  • Stir together, gently, using a rubber spatula

 

In a medium bowl, sift:

  • 1/2 cup all purpose flour

  • 1/2 cup unsweetened cocoa powdered

  • Add to other ingredients.

  • Stir together slowly until batter is smooth and uniform.

  • Stir in chocolate chips and walnuts.

 

Pour into greased baking pan. Bake for 20 minutes.

Cool completely and enjoy.

Cut 4 x 4 squares. (If you desire smaller pieces, cut each square in half, like pictured above)
