Healthy-ish Banana Muffins

Good day fellow foodies,

 

Tired of a sugar rush in the morning because of that glazed doughnut, frosted cinnamon roll, or over sweet breakfast cereal? My healthy-ish banana muffins will give you a sweet fix, without the horrible sugar crash or headache. Not only is this a great and easy muffin recipe, it can be easily made into a standard quick loaf for your banana bread fixes. 

 

 

 

 

 Healthy-ish Banana Muffins

Oven: 350 degrees F

Yields: 18 medium muffins (or 1 loaf pan)

Time: 23 minutes

Pans needed: 1 muffin tin, lined with paper muffin wrappers 

 

Ingredients:

4 eggs

2 teaspoon vanilla extract

1/2 cup vegetable oil

1/4 cup honey

1 cup mashed banana ( approx. 2 bananas)

1 teaspoon salt

2/3 cup almond flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 1/2 cup thick rolled oats (not instant)

1/2 cup golden flaxseeds

1 cup dark chocolate chips

1 cup peanuts (or any other nut of your choice), chopped

1/2 cup unsweetened coconut flakes

 

Directions:

  • In a standing kitchen mixer, with the paddle attachment, combine:

    • 4 eggs

    • 2 teaspoon vanilla

    • 1/2 cup vegetable oil

    • 1/4 cup honey

    • 1 cup mashed banana

    • 1 teaspoon salt

  • Mix, on low speed, for 2 minutes or until combined.

  • Add remaining ingredients to bowl:

    • 2/3 cup almond flour

    • 1/2 teaspoon baking soda

    • 1/2 teaspoon baking powder

    • 1 1/2 cup thick rolled oats

    • 1/2 cup golden flaxseed

    • 1 cup dark chocolate chips

    • 1 cup peanuts, chopped

    • 1/2 cup unsweetened coconut flakes

  • Mix on low speed, for 2-3 minutes, or until combined into a moist batter.

  • Scoop batter into paper-lined muffin tin.

  • Bake for 23 minutes or until golden.

  • Eat in the morning. Or afternoon. Or dessert.
