Christmas Gingerbread-ish Sprinkle Cookies

Hello fellow foodies and bakers,

 

Chilly weather is here! Baking season is here! Holiday is in the air! What is a better way to start the season right than with a simple gingerbread-ish Christmas cookies filled with sprinkles. Not only are these a delicious, they are perfect for a cookie swap or foodie gift.

 

What makes 'em Gingerbread-ish? Well, there is no ground ginger and only cinnamon and nutmeg are used. The molasses makes the cookies extra soft and holiday-tasting. The extra addition of demerara sugar, a coarse raw sugar with a toffee flavor, adds a true sweetness crunch! 

 

 

Christmas Gingerbread-ish Sprinkle Cookies

Oven: 350 degrees F

Time: 16 minutes

Yields: 24 

 

Ingredients:

3/4 cup unsalted butter, soften and cubed

1 cup brown sugar

1 egg

1 teaspoon vanilla extract

1 teaspoon rum extract

1/4 cup molasses

1 tablespoon room temp water

2 1/4 cup all purpose flour

1 teaspoon ground nutmeg

1 teaspoon baking soda

2 teaspoon ground cinnamon

1 teaspoon sea salt

1 tablespoon red sprinkles

1 tablespoon green sprinkles

1/2 cup demerara sugar 

 

Directions:

  • In a kitchen mixer, with a paddle attachment, cream until light fluffy, 10-ish minutes 

    • 3/4 cup unsalted, soften butter

    • 1 cup brown sugar

      • Scrape down with a spatula to ensure an even batter is forming.

  • Combine in a small bowl:

    • 1 egg

    • 1 teaspoon vanilla extract

    • 1 teaspoon rum extract

    • 1/4 cup molassses

    • 1 tablespoon room temp water

      • Slowly add to creaming butter and sugar. Scrape down with a spatula.

  • Shift together in a medium bowl:

    • 2 1/4 cup all purpose flour

    • 1 teaspoon nutmeg

    • 1 teaspoon baking soda

    • 2 teaspoon cinnamon

    • 1 teaspoon sea salt

    • 1 tablespoon red sprinkles

    • 1 tablespoon green sprinkles

      • Add to mixture. Scrap down with a spatula.

  • Scoop into small balls and roll in demerara sugar. 

  • Place onto parchment lined cookie sheets.

  • Bake for 16 minutes and cool. Eat and enjoy!
