Happy new year!
The crazy holiday schedule is over and we are starting fresh on a new year and new month! With the sweets, cookies, and dessert overload from last month, it is very normal to want to only consume green juice and raw produce for the entire month of January. When that sweet tooth kicks in, enjoy yourself with a healthy-ish cookie filled with chocolate and peanut butter.
What makes this cookie healthy-ish? Coconut sugar! Coconut sugar, versus white or brown sugar, is a more natural sugar that will not give you the sugar crash after consuming it. Plus, it has a mild sweetness to it making these cookies simply sweet. Coconut sugar can be found in natural food markets, check the bulk food section.
What is even better about this recipe? It only takes only bowl and makes enough for an entire week...if the cookies last that long!
One Bowl Peanut Butter and Chocolate Chip Cookies
Oven: 350 degrees F
Yields: 18 medium cookies
Time: 18 minutes
1/4 cup coconut oil, melted
2/3 cup coconut sugar
1 teaspoon sea salt
1 teaspoon baking soda
4 oz unsweetened applesauce
3/4 cup creamy peanut butter
2 1/2 cup almond meal
1 1/2cup thick oats
1/4 cup flaxseed meal
2/3 cup walnuts, chopped
2/3 cup dark chocolate chips
Combine all ingredients in a standing kitchen aid mixer, fitted with the paddle attachment.
Mix for 1-2 minutes or until uniformly combined. Use a rubber spatula
Scoop into medium size balls onto parchment lined cookie sheets. Bake for 18 minutes.
Eat and enjoy, guilt free.
