Super Simple 1- bowl PB Almond Granola

Greeting fellow foodies,


Everybody loves a good muffin, tender scone, or sweet cinnamon roll for breakfast. What is easier to make and also doubles as a quick afternoon snack? Granola! Not only is it easy to make, you can make it as sweet as you want it to be!


Don't care for coconut flakes in your granola? Leave it out. Love dried fruit? Pick your favorite and add it at the end. Think cashews are better than almonds? Substitute 'em. Use this recipe as a base and tweak it to your cravings.


Eat this granola solo. Eat it with fruit and almond butter. Eat it over your favorite ice cream.


 1-Bowl PB Almond Granola

Makes: 5 cups

Oven: 325 degrees F

Time: 20-25 minutes



2 cups old fashioned thick oats (not instant)

1 teaspoon ground cinnamon

1/2 teaspoon fine sea salt

1/4 cup unsweetened coconut flakes 

4 oz dark chocolate, chopped 

1/4 cup goji berries 

1 cup chopped almonds

1/4 cup agave nectar (or honey or maple syrup)

1/4 cup creamy peanut butter



  • In a large bowl combine:

    • 2 cups oats

    • 1/4 cup unsweetened coconut flakes 

    • 1 teaspoon ground cinnamon

    • 1/2 teaspoon fine sea salt

    • 1 cup chopped almonds

  • Set aside.

  • In a small sauce pot, add:

    • 1/4 cup agave nectar 

    • 1/4 cup creamy peanut butter

      • Stir with heat-safe spatula until melted and combined, over low heat. Approx. 3-5 minutes.

  • Add agave-peanut butter mixture to large bowl with oats, almonds, salt and cinnamon. Stir until uniformed and well combined. 

  • Spread over parchment lined cookie sheet

  • Bake for 20-25 minutes or until golden. 

  • Cool for 1 hr.

  • Add granola to large bowl. 

    • Add 4 oz dark chopped chocolate and 1/4 cup goji berries.

    • Store in air tight containers.

  • Eat and enjoy.
