What is better than a simple PB cookie? Adding pumpkin seeds and chia seeds to it! This easy-peasy 7-ingredient cookie is tasty as an afternoon pick me up or after dinner dessert. Bonus part: you can do it all in using one bowl, spatula, and measuring spoons / cups.
Pumpkin & Chia Seed PB Cookie
Yields: 24 small cookies, using a small scoop
Oven: 350 degrees F
Time: 16 minutes total
Used: Parchment-lined cookie sheets
In a kitchen mixer, fitted with the paddle attachment:
Combine all ingredients
Mix on low speed until combined 3-4 minutes
Scrape down using a spatula
Using a small ice-cream scoop, place 6 small scoops on a parchment lined cookie sheet
Slight 'squish' down with your hand. Using 1/4 cup pumpkin seeds, top each cookie with a few seeds.
Bake for 16 minutes
