Oat Streusel Jam Bars

Hello fellow foodies,

 

What is an easy cookie to make? My oat streusel jam bars! Why? There is one recipe for the crust AND topping, plus you can use pre-made jam (or make your own, if that is your, well, jam)

 

 

 

 

 

These jam bars are great: for beginner bakers, when you want an easy and fast dessert, baking with kiddos, or trying to use up some leftover jam. Paired perfectly with vanilla ice-cream, this also is a tasty summer time treat to enjoy!

 

 

Oat Streusel Jam Bars

Yields: 1 - 9 inch square baking pan (approx. 16 medium bars)

Oven: 350 degrees F

Time: 60 minutes

Equipment needed: Large bowl, standing kitchen mixer, spatula, measuring cups/spoons, 9 inch square baking pan, parchment paper 

 

Ingredients needed:

1 cup all purpose flour

1 cup oats

1 1/2 cup unsalted butter, cut into cubes

1 teaspoon salt

1 teaspoon cinnamon

1 cup brown sugar

1 - 16 oz seedless jam, your favorite (I used strawberry)

 

Recipe for streusel crust and topping:

  • In a standing kitchen, with the paddle attachment, add:

    • 1 cup all purpose flour

    • 1 cup oats

    • 1 cup brown sugar

    • 1 teaspoon cinnamon

    • 1 teaspoon salt

  • Mix on low speed for 2 minutes.

  • Add:

    • 1 1/2 cup unsalted butter, cut into cubes. 

  • Mix on low speed for 2-3 minutes, or until crumbly and pea-sized dough forms. 

  • Press 2 1/2 cups of the streusel into the bottom of 9 inch square greased, parchment paper-lined pan. Use your fingers to ensure a nice solid crust is form. 

  • Spread 1 -16 oz jar of jam on top of the crust, using a spatula.

  • Top the jam with remaining streusel 

  • Bake for 1 hour. Cool for, at least, 1 hour.

  • Cut, service, and enjoy!
