Basic Muffin Recipe

Hello bakers and foodies,

 

What is a better way to start a weekend morning that a simple baked good, like a muffin? This recipe is simple. Add whatever is on hand in your kitchen: lemon zest, frozen fruit, dried cranberries, oats, cinnamon, or even chocolate chips.

 

 

 

Basic Muffin Recipe

Yields: 12 medium size muffins

Equipment needed: Mixing bowls, measuring cups/spoons, muffin tin, muffin liners, spatula, whisk

Oven: 425 degrees F 

Baking time: 15-18 minutes. 

Pro tip: Insert a toothpick or paring knife. Once it comes out clean, the muffins are done 

 

Ingredients needed: 

  • 2 cups all purpose flour, sifted

  • 1/4 cup white sugar 

  • 3/4 teaspoon baking soda

  • 1/2 teaspoon fine sea salt

  • 1 cup milk

  • 1/4 cup veg oil (or other neutral oil)

  • 2 eggs

  • 1 teaspoon vanilla extract

 

Directions:

In a medium size bowl, sift together dry ingredient:

  • 2 cups all purpose flour

  • 1/4 cup white sugar

  • 3/4 teaspoon baking soda

  • 1/2 teaspoon fine sea salt

  • Add any other optional ingredients here (fruit, spices, zest, etc)

In another bowl, add wet ingredients:

  • 1 cup milk

  • 1/4 cup veg oil

  • 2 eggs

  • 1 teaspoon vanilla

  • Whisk together

  • Using a spatula, add to dry ingredients and stir slowly to make a uniform batter. Make sure any big flour lumps are gone. Avoid over mixing, it causes a tough muffin

  • Place muffin lines in muffin tin. Fill each almost full (approx. 2/3 full) using a 1/4 cup measuring cup. Top with coarse sugar or streusel. 

  • Bake for 15-18 minutes or golden brown. 

  • Eat and enjoy!
