Baking with SunSpire: Double Chocolate Chip Cookies

SunSpire Double Chocolate Cookies:

Yields: 24 small cookies

Oven: 350 degrees F

Time: 14 minutes

Equipment needed: Standing kitchen mixer with the paddle attachment, mixing bowls, measuring cups/spoons, cookie scoop, spatula, parchment lined cookie trays

 

 

Ingredients needed:

  • 10 tablespoons butter, cubed and soften

  • 2/3 cup white sugar

  • 3/4 cup brown sugar

  • 1 egg

  • 1 cup all purpose flour, sifted

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 3/4 teaspoon salt

  • 3/4 cup unsweetened cocoa powder, sifted

  • 2 cups SunSpire dark chocolate chips

Directions:

  • In standing kitchen mixer, with the paddle attachment:

    • Cream 10 tablespoons soften butter

    • 2/3 cup white sugar

    • 3/4 cup brown sugar

    • Until light and fluffy, approx. 10 minutes on medium speed

  • Whisk in a bowl:

    • 1 egg

    • Add slowly to butter-sugar mixture

  • Sift together in a bowl:

    • 1 cup all purpose flour

    • 1/2 teaspoon baking soda

    • 1/2 teaspoon baking powder

    • 3/4 teaspoon salt

    • 3/4 cup unsweetened cocoa powder

    • Add to butter-sugar-egg mixture

    • Add 2 cups SunSpire chocolate chips

  • Mix on low speed until uniform and combined. 

  • Scoop cookie dough onto parchment lined cookie trays

  • Bake for 14 minutes

  • Cool. Eat. Be happy
