Baking with SunSpire: Carob Chip - Espresso Scones

What is SunSpire's  one of a kind chocolate product? Carob chips!

What is a carob chip? Chocolate chip-ish. They are made from the carob tree and looks very similar to a regular chocolate chip.

What is the difference? Taste. They are less sweet which means less sugar in 'em and less fat. They also won't smell quite like regular chocolate.

Are they healthy? Well, anything sweet in moderation right? They are higher content in fiber, contain calcium and there is absolutely zero caffeine in carob chips versus normal chocolate chips.

Can I substitute 1 for 1 in recipes? Yes! That is what most bakers do. If you want more chocolate-ness, feel free to add more. 

What can I bake with carbo chips? Anything you want! I made some tasty scones with 'em.

 

 

Carob Chip - Espresso Scones

Yields: 12 medium size

Oven: 425 degrees F

Time: 18 minutes

Equipment needed: 2 mixing bowls, whisk, spatula, bowl scrapper (optional) measuring cups/spoons, cutting board, knife, pastry brush, parchment-lined cookie trays, standing cheese grater (optional)

Ingredients needed:

2 3/4 cup all purpose flour

1 tablespoon baking powder

1 teaspoon fine sea salt

1/3 cup white sugar + 1 tablespoon more for topping 

1/2 stick cold butter 

1 cup SunSpire carob chips

2 tablespoons instant espresso powder

2/3 cup milk (plus more if needed)

2 eggs

 

Directions:

  • In a medium bowl, sift together:

    • 2 3/4 cup all purpose flour

    • 1 tablespoon baking powder

    • 1 teaspoon fine sea salt

    • 1 /3 cup white sugar 

  • Using a cheese grater (my pro tip), grate the butter on it. Add it to your dry ingredients.

    • Don't have a standing cheese grater? Cut the butter into the dry ingredients using your fingers and hands, as if you were making a pie crust.

  • Add to your bowl with dry ingredients and butter:

    • 2 tablespoons instant espresso

    • 1 cup carob chips

    • Stir with a whisk to ensure it is uniform and blended

  • In another medium bowl, add:

    • 2 eggs

    • 2/3 cup milk

    • Whisk and add to other bowl of ingredients 

    • Using a bowl scraper (or spatula if you do not have one), gently fold the wet and dry ingredient together until a dough forms

  • Shape it into 2 round disks. Brush each top disk with water, and top with a sprinkle of sugar.

  • Cut each disk into 6 wedges.

  • Place 6 wedges on one parchment lined cookie tray. 

  • Bake for 18 minutes, rotating half way

  • Eat and enjoy!
