Pistachio-Cherry-White Chocolate Scones

Hello foodies,

 

Brunch is a popular trend in the food world, yet brunch at home makes it easier and sweeter with homemade baked goods. Avoid the long lines and pricey cocktails for a homemade breakfast with these sweet and decadent scones. 

 

 

 

Pistachio, Cherry, and White Chocolate Scones

Yields: 12

Oven: 425 degrees F

Time: 12 minutes

 

Equipment needed: Large mixing bowl, measuring cups/spoons, chef knife, parchment lined sheet tray, bowl scraper (or spatula if you do not have one), cutting board

 

Ingredients:

2 1/3 cup all purpose flour

1/3 cup brown sugar

1 tablespoon baking powder

1 teaspoon fine sea salt

1/2 cup cold unsalted butter

2/3 cup milk

2 eggs

1 cup diced fresh cherries

1/2 cup chopped pistachios

4 oz  chopped white chocolate

For topping:

1 beaten egg

2 tablespoon demerara sugar sugar (if you do not have demerara sugar sugar, you can use regular white sugar) 

 

 Directions:

  • Sift dry ingredients in a large mixing bowl:

    • ​2 1/3 cup all purpose flour

    • 1/3 cup brown sugar

    • 1 tablespoon baking powder

    • 1 teaspoon fine sea salt

  • 'Cut' 1/2 cup cold cubed butter into the dry ingredients, as you would pie dough. Do it until small peas form

  • Whisk together liquid ingredients:

    • ​2/3 cup milk

    • 2 eggs 

  • Add to dry ingredients

  • Add:

    • ​1 cup diced fresh cherries

    • 1/2 cup chopped pistachios

    • 4 oz chopped white chocolate 

    • To dry/wet ingredient bowl

  • Carefully, using a bowl scraper, fold all ingredient together until a soft dough forms 

  • Form dough into 2 round circle

  • Place on cutting board. Cut each circle into 6 triangles

  • Brush each circle with egg wash and sprinkle 1 tablespoon demerara sugar on top

  • Place on parchment lined cookie try and bake for 12 minutes
