Cinnamon Streusel Walnut Coffee Cake

Summer in Seattle is slowly wrapping up. Cooler weather, soft breezes, and orange leaves are now appearing every single day. What is the best part of fall? Baking season begins! What is the best way to start it? With a simple and delicious coffee cake. 

 

What is the best part of coffee cake? You get to eat cake for breakfast! This coffee cake is super simple, moist and perfect for a weekend breakfast....or afternoon snack. When is cake not good to eat?

 

 

Cinnamon Streusel Coffee Cake

Yieds: 1 - 9inch square cake pan

Oven: 350 Degrees F

Time: 1 hr - 1 hr 10 minutes

Equipment: Standing kitchen mixer with paddle attachment, parchment-paper lined, greased 9 inch x 9 inch square cake pan, mixing bowls, spatula, measuring cups/spoons

 

Ingredients:

For Cake:

  • 1 stick (1/2 cup) unsalted butter, cubed 

  • 3/4 cup white sugar

  • 2 eggs

  • 1 cup milk

  • 2 cups all purpose flour

  • 2 teaspoon baking powder

  • 1 teaspoon salt

  • 1 teaspoon ground cinnamon

For Cinnamon Walnut Streusel topping:

  • 4 tablespoons unsalted butter, cubed

  • 1/2 cup all purpose flour

  • 1/2 cup oats

  • 1/2 cup brown sugar

  • 1/4 teaspoon ground cinnamon

  • 1/2 cup chopped walnuts 

 

Directions:

For Cake:

  • In a standing kitchen mixer, with the paddle attachment, cream together:

    • 1 stick unsalted butter, cubed

    • 3/4 cup white sugar

    • Cream for approx. 10 minutes, until light and fluffy

  • In a small bowl, add:

    • 2 eggs

    • 1 cup whole milk

    • Set aside 

  • In a medium bowl, sift together:

    • 2 cups all purpose flour

    • 2 teaspoon baking powder

    • 1 teaspoon salt

  • Set the kitchen mixer on low speed.

  • Slowly, add 1/3 of liquid mixture. Alternately, add the dry mixture, 1/3 at a time. 

  • Do this until all the liquid and dry ingredients are gone and an uniform batter is complete. 

  • Take 1/4 of the the cake batter and put it in a small bowl.

    • Add 1/4 teaspoon ground cinnamon and stir until blended.

  • Add plain coffee cake batter to the 9x9 inch square pan. 

  • On top, add cinnamon coffee cake batter. Swirl with small knife.

  • Set aside and make topping.

Make Cinnamon Walnut Streusel topping:

Add all in standing kitchen aid mixer with paddle attachment:

  • 4 tablespoon unsalted butter 

  • 1/2 cup all purpose flour

  • 1/2 cup oats

  • 1/2 cup brown sugar

  • 1/4 teaspoon cinnamon

  • 1/2 cup chopped walnuts

  • Mix on low speed, 5-7 minutes, until coarse.

  • Put all streusel on top of coffee cake.

  • Bake for 1hr - 1hr 10 minutes. Insert a paring knife and make sure it come out clean. Thus, it is done!

  • Cool and eat for breakfast...or whenever.
