Baking with SunSpire Chocolate: Peanut butter cups

Hello foodies,

 

I am participating in SunSpire Chocolate's September Baking Club. What is the September Baking Club all about? Bakers and bloggers bake their monthly recipe and share it with one another. Not only do we get to see what people are baking across the nation, we get to meet some fellow sweet peeps! Who is SunSpire Chocolate? SunSpire Chocolate  is a humble chocolate company that offers organic and fair-trade chocolate products, such as a variety of chocolate chips, bars, and specialty chips. 

 

Their September Baking Club recipe is creating homemade peanut butter cups using their chocolate.  The best part of September's Peanut butter cups? It only take 4 simple ingredients found in your pantry. The better part? The recipe can easily be varied and simple additions can be added to your cups!

 

 

 

 

 Peanut Butter Cups

Yields: 7 regular size cups

Baking equipment: 2 microwave safe bowls, measuring cups / spoons, muffin tin, silicone or paper muffin wrappers, spatula, spoons

Ingredients:  1 cup SunSpire semi-sweet chocolate chips, 1 tablespoon coconut oil, 1/2 cup peanut butter, and 1/2 cup powder sugar

 

Directions:

  • In a small microwave bowl, add:

    • ​1 cup SunSpire semi-sweet chocolate chips

    • 1 tablespoon coconut oil 

    • Microwave for 30 seconds, stir, and microwave for 30 more seconds. Stir until smooth and chocolate has completely melted. 

    • Set aside

  • In a small bow, add:

    • ​1/2 cup peanut butter

    • 1/2 cup powder sugar 

    • Stir until combined. It will look 'wet sand.' 

  • In a muffin tin, line it with silicone or paper muffin wrappers

  • Put approx. 1 1/2 tablespoon melted chocolate on the bottom of each muffin tin

  • Make a small ball with the peanut butter-powder sugar filling. Put ball in the middle of the melted chocolate

  • Top each muffin tin with remaining melted chocolate 

  • Freeze until firm, at least 2 hours.

  • Pop out of wrapper, eat and enjoy.

  • Don't worry if it doesn't look perfect! 

Varieties you can use while baking this recipe:

  • Using a different nut butter

  • Add sea salt

  • Add nuts 

  • Add dried fruit
