Baking with SunSpire Chocolate: Cafe Au latte Brownies

How sweet is that?

 

October's recipe is from Sally's Baking Addiction Blog , "Seriously Fudgy Homemade Brownies." Who can deny a homemade chocolate-y brownie from the oven? The recipe is easy to follow and makes an ooey-goeey brownies anyone can enjoy. 

 

I took the base recipe and added a Seattle-twist to it: included espresso powder, coffee emulsion, and cream cheese. Coffee and cream cheese are classic and iconic flavors in Seattle. Coffee (and caffeine!)  is highly consumed, and cream cheese are always found on hot dogs (yes, hot dogs!!!) on food carts throughout the city.  Voila: Cafe Au Latte Brownies are created using SunSpire chocolate.

 

 

Cafe Au Latte Brownies

Yields: 1 - 9x9 inch square 

Time: 45 minutes

Oven: 350 degrees F

 

Equipment needed: Microwave safe bowl, mixing bowl, measuring cups / spoons, spatula, whisk, parchment-lined 9x9 inch baking pan, standing kitchen mixer with paddle attachment 

 

Ingredients needed: 

  • 3/4 up unsalted butter, cubed

  • 4 oz SunSpire Organic Bittersweet Chocolate chips, separated

  • 2 cups white sugar and 1/4 cup white sugar, separated 

  • 3 large eggs

  • 2 tablespoon instant espresso, separated

  • 2 tablespoon coffee emulsion, separated

  • 2 teaspoon vanilla

  • 1 cup all purpose flour

  • 1 cup unsweetened cocoa powder

  • 1 teaspoon fine sea salt

  • 1 cup SunSpire Carob chips 

  • 4 oz cream cheese

  • 1 tablespoon milk

  • 1/2 cup chopped walnuts

Directions:

  • In a microwave safe bowl, mix:

    • 3/4 cup unsalted butter

    • 2 oz SunSpire Organic bittersweet chocolate chips

    • Microwave for 30 seconds, whisk, and microwave again until melted

    • Place melted chocolate and butter in a large bowl

  • To large bowl of melted chocolate and butter, add:

    • 2 cups sugar

    • 3 large eggs

    • 1 tablespoon instant espresso

    • 1 tablespoon coffee emulsion 

    • 2 teaspoon vanilla extract

    • Mix with spatula until uniform 

  • In another mixing bowl, sift together:

    • 1 cup cocoa powder

    • 1 cup all purpose flour

    • 1 teaspoon fine sea salt 

    • Mix to melted chocolate-butter bowl with spatula

    • Mix until just combined

  • Pour into greased, parchment-lined baking pan. Smooth it out with a spatula. Set aside

  • In a standing kitchen mixer with a paddle attachment, add:

    • 4 oz cream cheese

    • 1 tablespoon milk

    • 1/4 cup white sugar 

    • 1 tablespoon instant espresso

    • 1 tablespoon coffee emulsion 

    • Mix until smooth on low speed for 2-3 minutes, it will look like a milk chocolate color

  • Spread the cream cheese mixture on top of the brownie batter

  • Add: 1 cup SunSpire Carob chips and 1/2 cup chopped walnuts on top

  • Bake for 45 minutes, rotating half way. Cool 

  • Good tip for test for doneness: Pick a tooth pick or paring knife into the center of the brownies. When it comes out clean the brownies are done. 

  • Eat and enjoy!
