2-Bowl Chocolate Zucchini Bread Recipe

What is the easiest way to eat your veggies? Make a quick bread out of 'em and add chocolate chips, of course! Zucchini bread, similar to banana bread, is a simple quick bread, perfect for breakfast, a quick snakc, or just because. It is made with applesauce for moistness, zucchini for texture, and chocolate chips for sweetness.

 

 

 

 

The recipe is easy-peasy, only 2 bowls all it takes! The most time consuming part is grating the zucchini and getting all the moisture out. Zucchini contains a lot of moisture and, when baking and cooking, we want to remove that moisture.

 

 

 

Tip on grating zucchini: Place box grater on a cutting board. Grate zucchini on medium coarse. Place in paper towel, and squeeze, squeeze, squeeze over the kitchen sink! Repeat 3 times until the grated zucchini is dry.

 

Chocolate Zucchini Bread

Yields: 1 loaf

Oven: 350 degrees F

Time: 1 hr

Equipment needed: 9 inch x 5 inch loaf pan, greased and lined with parchment paper; 2 medium mixing bowl; spatula; measuring cups / spoons; box grater; paper towels 

Ingredients needed:

  • 1 1/2 cup grated zucchini (about 2 medium; see tip above)

  • 1 cup white sugar

  • 1/4 cup brown sugar

  • 1/2 cup unsweetened applesauce

  • 1/3 cup veg oil

  • 2 eggs

  • 1 1/2 cup all purpose flour

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon fine sea salt

  • 1/2 teaspoon ground cinnamon

  • 1/4 cup unsweetened cocoa powder

  • 1 cup semi-sweet chocolate chips

Directions:

  • In one mixing bowl, combine:

    • 1 1/2 cup grated zucchini

    • 1 cup white sugar

    • 1/4 cup brown sugar

    • 1/2 cup unsweetened applesauce

    • 1/3 cup veg oil

    • 2 eggs

    • Set aside

  • In another bowl, sift together:

    • 1 1/2 cup all purpose flour

    • 1/2 teaspoon baking soda

    • 1/2 teaspoon baking powder

    • 1/2 teaspoon fine sea salt

    • 1/2 teaspoon ground cinnamon

    • 1/2 cup unsweetened cocoa powder

    • Add to wet ingredients

    • Stir with spatula until uniform and combined 

    • Add 1 cup semi-sweet chocolate chips 

  • Pour batter into loaf pan

  • Bake for 1 hour or until a paring knife or toothpick comes out clean 

  • Let cool, eat and enjoy
