Top Your Own Carrot Oatmeal Cookies

Good day foodies and bakers,

 

Spring is here, sun is shinning, blue skies are out and it is time for an easy recipe to make so you can enjoy more time outside. With farmers market coming to your local neighborhood and more fresh produce becoming available, these super tasty carrot oatmeal cookies are a great way to use grated carrots, along with any other sweet and savory pantry ingredients.

 

Why are these called "Top your own?" Because you get to choose what toppings you top the cookies with! It is a 2-bowl cookie method and topped with any add-on ingredients you have on hand. Tasty and popular add ons are: chocolate chips, chopped nuts, pumpkin seeds, hemp seeds, coconut flakes, and chia seeds. After you place the cookie on the cookie sheet, simply top it with your favorite add-on. Ta-da! 

 

 

Top Your Own Carrot Oatmeal Cookies

Yields: 12 medium cookies

Oven: 350 degrees F

Time: 15 minutes

Equipment needed: Standing kitchen mixer, measuring cups / spoons, cookie scoop, parchment lined cookie sheets, box cheese grater, mixing bowls, spatula 

Ingredients needed:

  • 3/4 cup egg whites (or 2 whole eggs)

  • 1/2 cup almond butter

  • 1/4 cup brown sugar

  • 1/2 cup almond flour

  • 1/2 cup all purpose flour

  • 2 1/2 cup oats

  • 1 teaspoon ground cinnamon

  • A pinch of ground ginger

  • A pinch of ground nutmeg

  • 1/4 teaspoon fine sea salt

  • 1/2 teaspoon baking powder 

  • 1 cup grated carrot (1 medium carrot; Pro tip: Use a box cheese grater to grate a carrot)

  • 1/2 cup raisins

Directions:

  • In a standing kitchen mixer with a paddle attachment, mix:

    • ​3/4 cup egg whites

    • 1/2 cup almond butter

    • 1/4 cup brown sugar 

    • Mix on low speed for 2-3 minutes, until blended and combined

  • In a separate bowl, sift and mix together:

    • ​1/2 cup almond flour

    • 1/2 cup all purpose flour

    • 2 1/2 cup oats

    • 1 teaspoon ground cinnamon

    • Pinch of ground ginger

    • Pinch of ground nutmeg

    • 1/4 teaspoon fine sea salt

    • 1/2 teaspoon baking powder

    • 1 cup grated carrot

    • 1/2 cup raisins

    • Add this to the egg whites, almond butter, and brown sugar mixture 

    • Mix on low speed until just combined, 1-2 minutes. Scrape down 

    • Scoop onto parchment line cookie trays

    • Slightly press down to form a round disk

    • Top with any toppings you desire

    • Bake, eat and enjoy
