1- Bowl Pumpkin Spice Granola (No oil! Vegan friendly!)

Hello bakers,

 

Fall is here! Pumpkin everything is here! Chilly weather is here! The start of baking season has officially began. There are hundreds of pumpkin recipes out there, from cheesecake to soup to doughnuts to ice cream. What makes this pumpkin recipe so special? It takes ONE mixing bowl, and the ingredients are all vegan friendly. 

 

 Use this pumpkin spice granola in your vanilla bean yogurt, top your chocolate gelato, or save it for a quick snack on the go. The even better part? Adjust this recipe to your liking and your pantry. Have left over chocolate chips? Add 'em. Like walnuts? Substitute 'em. Not a cinnamon fan? Leave it out.

 

 

 

 

1- Bowl Pumpkin Spice Granola

Yields: 3 1/2 cups

Time: 45 minutes

Oven: 350 degrees F

 

Equipment needed: Large mixing bowl, measuring cups / spoons, spatula, parchment lined cookie tray

Ingredients needed:

3 cups rolled oats

1/2 cup almond butter

1 cup pumpkin puree

1/2 cup maple syrup

1 1/2 teaspoon ground cinnamon

1/4 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/2 teaspoon fine sea salt

1/2 cup coconut flakes

1/4 cup pumpkin seeds

1/2 cup chopped almonds

1/4 cup chia seeds

 

Directions:

  • In a large bowl, combine all ingredients with a spatula

  • Stir until combined, uniform, and even. All chunks of almond butter and pumpkin puree should be super smooth!

  • Pour onto parchment lined cookie tray 

  • Bake for 45 minutes. Every 15 minutes, remove from oven and stir with a spatula, and rotate cookie tray

  • Cool. Eat. Enjoy
