Small Batch, 1- Bowl Chocolate Chip Cookies

Hello foodies,

 

Are you craving something chocolate-y? A homemade treat? Yet don't want to make a giant cake, a dozen cookies, or a big batch of brownies for only yourself? A small batch of homemade cookies will be perfect to satisfy your sweet tooth. 

 

This easy-breazy cookie recipe yields 5 big cookies (or 8 small ones), depending on your cookie scoop size. Pro tip: Use an ice cream scoop versus a cookie scoop to get those big, bakery cookie size cookies!

 

Even better: The recipe simply uses 1 mixing bowl for the ingredients. This will truly be your go-to recipe for a quick, cookie treat.

 

 

 

5 - Chocolate Chip Cookie Recipe

Yields: 5 big cookies (or 8 small ones)

Oven: 350 degrees F

Time: 10 minutes total

 

Equipment needed: Kitchen Aid mixer (or any standing kitchen mixer) with paddle attachment; Measuring cups/spoons; parchment lined cookie tray; cookie scoop 

 

Ingredients needed: 

4 tablespoons veg oil (or any neutral oil)

2 tablespoons brown sugar

2 tablespoons white sugar

1 egg

1/2 teaspoon vanilla extract

1/2 cup and 2 tablespoons all purpose flour

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup bittersweet chocolate chips (or your favorite chocolate chips) 

 

Directions:

  • In the Kitchen aid mixing bowl, add: 

    • 4 tablespoons veg oil

    • 2 tablespoons brown sugar

    • 2 tablespoons white sugar

    • Mix, with paddle attachment, for 5 minutes on medium speed

  • Add, directly to the bowl:

    • 1 egg

    • 1/2 teaspoon vanilla extract

    • Mix for 1 minute on medium speed 

  • Add, directly to the bowl:

    • 1/2 cup plus 2 tablespoons all purpose flour

    • 1/4 teaspoon baking soda

    • 1/4 teaspoon salt

  • Using a cookie scoop, scoop onto parchment lined cookie tray. Flatten the cookie to a round disk. Bake for 10 minutes and let cool to room temp.
