3 - Sugar Cookies Recipe - No chilling required!

Hello foodies and bakers,

 

Everyone is lovin' these small batch recipes. Why? It is perfect for when you are at home (which most Seattle-lites are doing these days) and need something sweet for one...or two foodies. Plus, nothing really taste better than a homemade treat right out of the oven.

 

Sugar cookies are simple, easy, and well, elegant. There is really no extra fuss and muss with chopping nuts, picking out the right chocolate, or even chilling the dough. This recipe makes 3 large cookies, or 6 small cookies. Perfect for ice cream sammies, paired with coffe, or dipped in melted chocolate.

 

3 - Large Sugar Cookie Recipe

Yields: 3 large cookies (or 6 small ones)

Oven: 350 degrees F

Time: 10 minutes

 

Equipment needed: Standing kitchen mixer with paddle attachment; Measuring cups/spoons; cookie scoop; parchment lined cookie tray

 

Ingredients needed:

  • 2 tablespoons veg oil (or another neutral oil)

  • 2 tablespoons white sugar

  • 1 egg

  • 1/2 cup plus 2 tablespoons all purpose flour

  • 1/4 teaspoon fine sea salt

  • 1/4 teaspoon baking powder

  • turbinado sugar, for rolling (you can substitute brown sugar)

Directions:

  • In a standing mixer bowl, add:

    • 2 tablespoons veg oil

    • 2 tablespoons white sugar

    • Mix, with paddle attachment, for 3-4 minutes on medium speed

  • Add:

    • 1 egg

    • Mix for 2-3 minutes, until blended

  • Directly in the bowl, add:

    • 1/2 cup and 2 tablespoons all purpose flour

    • 1/4 teaspoon sea salt

    • 1/4 baking powder

    • Mix for 1 minutes or until blended

  • Scoop onto parchment lined cookie tray

  • Roll in turbinado sugar (optional)

  • Bake for 10 minutes, rotating half way

  • Cool, eat and enjoy
