Berry Protein Baked Oatmeal

Hey foodies,

 

Many have asked for healthy baked goods and dessert recipes. Ta-da: here is the very first one! A jam packed breakfast filled a balanced mix of protein, carbs, and calories. This is perfect for, of course, breakfast, and also a quick snack in the afternoon to hold you until dinner. 

 

I used an egg white-based vanilla protein powder. Feel free to use your favorite protein powder and adjust the berries to your liking and preference. This is a super easy meal prep item that can be done anytime of day or week, too.

 

Berry Protein Baked Oatmeal

Yields: 9 squares; 8 x 8 inch baking dish

Oven: 350 degrees F

Time: 45 minutes

 

Equipment needed:

  • Mixing Bowls

  • Measuring cups / spoons

  • Spatula

  • Whisk

 

Ingredients needed:

  • 2 cups whole oats

  • 2 eggs

  • 1/4 cup vanilla protein powder (or any other protein powder)

  • 1 tablespoons brown sugar

  • 2 tablespoons chia seeds

  • 1 tablespoons ground cinnamon

  • 2 cups unsweetened almond milk

  • 1/2 cup mixed berries (or your favorite berry; fresh or frozen)

Directions:

  • In a medium mixing bowl, mix together the dry ingredients with a spatula

    • 2 cups whole oats

    • 1/4 cup protein powder

    • 1 tablespoons brown sugar

    • 2 tablespoons chia seeds

    • 1 tablespoons ground cinnamon

    • Set aside 

  • In another mixing bowl, whisk together the dry ingredients:

    • 2 eggs

    • 2 cups unsweetened almond milk

  • Add the liquids to the dry ingredients.

  • Set aside for 30 minutes for the oats to soften and absorb some liquid. Stir to ensure it is blended and uniform. 

  • Grease your 8 inch x 8 inch baking dish

  • Top with 1/2 cup mixed berries

  • Bake for 45 minutes

  • Cool and cut into 9 squares

  • Eat and enjoy! You can happily freeze what leftovers you have
