Many have asked for healthy baked goods and dessert recipes. Ta-da: here is the very first one! A jam packed breakfast filled a balanced mix of protein, carbs, and calories. This is perfect for, of course, breakfast, and also a quick snack in the afternoon to hold you until dinner.
I used an egg white-based vanilla protein powder. Feel free to use your favorite protein powder and adjust the berries to your liking and preference. This is a super easy meal prep item that can be done anytime of day or week, too.
Berry Protein Baked Oatmeal
Yields: 9 squares; 8 x 8 inch baking dish
Oven: 350 degrees F
Time: 45 minutes
Measuring cups / spoons
2 cups whole oats
1/4 cup vanilla protein powder (or any other protein powder)
1 tablespoons brown sugar
2 tablespoons chia seeds
1 tablespoons ground cinnamon
2 cups unsweetened almond milk
1/2 cup mixed berries (or your favorite berry; fresh or frozen)
In a medium mixing bowl, mix together the dry ingredients with a spatula
In another mixing bowl, whisk together the dry ingredients:
Add the liquids to the dry ingredients.
Set aside for 30 minutes for the oats to soften and absorb some liquid. Stir to ensure it is blended and uniform.
Grease your 8 inch x 8 inch baking dish
Top with 1/2 cup mixed berries
Bake for 45 minutes
Cool and cut into 9 squares
Eat and enjoy! You can happily freeze what leftovers you have
