Small Batch Oatmeal Raisin Cookies

Hello foodies,

 

Oatmeal raisin cookies are one of the classics and one of my personal favorites. Why? The oats! The raisins! How easy they can be made into ice-cream sammies! (Try it! Oatmeal raisin cookies pair lovely with vanilla bean ice cream) This recipe produces a not super sweet cookie because the raisins add sweetness to the cookies. 

Small Batch Oatmeal Raisin Cookies

Yields: 5 medium cookies

Oven: 350 degrees F

Time: 5 minutes

 

Equipment needed:

  • Standing kitchen mixer with paddle attachment

  • Spatula

  • Sifter (or fine mesh screen strainer)

  • Measuring cups / spoons

  • Cookie scoop

  • Parchment lined cookie trays 

  • Mixing bowl 

 

Ingredients needed:

  • 4 tablespoons unsalted, soften butter

  • 2 tablespoons brown sugar

  • 1 tablespoons white sugar

  • 1 egg

  • 1/2 cup all purpose flour

  • 3/4 cup oats

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon fine sea salt

  • 1/4 teaspoon baking soda

  • 1/3 cup raisins 

Directions: 

  • In the standing kitchen mixer, with the paddle attachment, add:

    • 4 tablespoons unsalted, soften butter

    • 2 tablespoons brown sugar

    • 1 tablespoon white sugar

    • Mix on medium speed for 5-7 minutes, until it is light and fluffy

    • Scrape down

  • Add:

    • 1 egg

    • Mix on low speed until blended

    • Scrape down

  • Sift together the dry ingredients in a medium bowl:

    • 1/2 cup all purpose flour

    • 3/4 cup oats

    • 1/2 teaspoon cinnamon

    • 1/4 teaspoon fine sea salt

    • 1/4 teaspoon baking soda

    • Add to mixer

    • Mix on low speed until just blended

    • Add 1/3 cup raisins and mix in by hand with a spatula

  • With a cookie scoop, scoop onto parchment lined cookie trays

  • Bake for 10 minutes

  • Cool, eat and enjoy
