Banana Carrot Bread

Hi foodies and bakers,

 

What is the item to bake right now? Banana bread! Why? Why not? It is pretty simple, delicious and a true family favorite. Here is a simple recipe with the addition of carrots (get ya veggies in!) and a lower sugar content. Bananas are naturally sweet, and with the addition of sweet carrots, you won't need a ton of extra sugar in this bread.

Banana Carrot Bread

Yields: 1 loaf

Oven: 350

Time:  Approx. 1 hr 

 

  • Equipment needed:

    • Standing kitchen mixer with paddle 

    • Mixing bowl

    • Spatula

    • Measuring cups and spoons

    • Sifter (or fine mesh screen)

    • Loaf pan, greased and lined with parchment paper or foil 

  • Ingredients needed:

    • 2 cups all purpose flour

    • 1 tsp baking soda

    • 1 tsp cinnamon

    • 1/4 tsp salt

    • 2 ripe medium bananas

    • 2 eggs

    • 1/4 cup coconut sugar

    • 1/4 cup oil

    • 1/4 cup unsweetened applesauce

    • 1/4 cup veg oil 

    • 1 cup grated carrots

    • 1/3 cup chopped walnuts (optional)

    • 1/2 cup almond milk (or your favorite milk)

  • Directions:

    • In a medium bowl, sift together dry ingredients:

    • 2 cups all purpose flour

    • 1 tsp baking soda

    • 1 tsp cinnamon

    • 1/4 tsp salt

    • Set aside

  • In kitchen aid mixer, with the paddle, mix together:

    • 2 ripe bananas

    • 2 eggs

    • 1/4 cup veg oil

    • 1/4 cup coconut sugar

    • 1/4 cup unsweetened applesauce

    • 1/2 cup almond milk

    • Mix on low speed until blended, 3-4 minutes

  • Add in:

    • 1/3 chopped walnuts

  • Pour into greased loaf pan. Bake for 1 hr or until a toothpick (or paring knife) comes out clean

  • Eat and enjoy!
